Chickpea Salad – Low GI

If you would like a simple and delicious meal to eat, why not try a chickpea (garbanzo beans) salad? This is one of my favorite quick meals to make, and I usually eat it alone or with something small, like some tuna.
Ingredients:
- 1 can of drained chickpeas
- Handful of green onions (scallions)
- 1 whole fresh tomato
- 1 large sprig of parsley
- Lemon juice from about half a lemon
- Olive Oil
Instructions:
Pour a can of drained chickpeas into a small salad bowl.
Chop up the onions, tomato and parsley and add to the bowl with the chickpeas.
Squeeze lemon juice over everything and douse with oil. Toss until well coated.
For added flavor you could add some fresh herbs from your garden.
After trying this delicious meal I think you will agree that a chickpea salad is definitely something you will want to add to your diet.
