Low Carb Shepherd’s Pie Recipe

Shepherd’s Pie or “cottage pie” is a traditional English dish made with lamb or mutton. In North America it’s usually made with beef or turkey. Usually vegetables such as green peas, carrots and corns are added to the mix.
Here’s a delicious low carb shepherd’s pie recipe for those who are watching their weight:
Ingredients:
- 1 pound of ground beef or turkey
- 1/2 onion, chopped
- 1 10 ounce package of frozen cauliflower
- 2 tablespoons of heavy cream
- 4 ounces of cheddar cheese, shredded
- salt and pepper
Instructions:
Brown the ground meat and onion as usual, drain. Spread the meat and onion in the bottom of the pie dish evenly.
Cook the cauliflower according to package directions, drain. Whip together cauliflower, 2 tbsp heavy cream, and cream cheese as if you were whipping mashed potatoes.
Season with salt and pepper to your liking (or any other seasonings you might like). Spread the whipped cauliflower over the meat layer in the dish.
Sprinkle with cheddar cheese across the top. Bake at 350 degrees F for 15 – 20 minutes until the cheese is melted and bubbling.
